Roasted Red Pepper Hummus

Roasted Red Pepper Hummus

Ingredients:
2 cloves chopped garlic*
1 can garbanzo beans (chickpeas)
3 Tbsp Tahini (sesame paste)
2 Tbsp lemon juice
1/2 cup chopped Roasted Red Peppers

Directions:
With food processor turned on, drop garlic cloves in and chop.  Drain garbanzo beans and set liquid aside.  Add beans, tahini, lemon juice, and red peppers to food processor and mix together.  Add liquid from garbanzo beans as needed and mix in food processor until texture is smooth.  Add salt and pepper to taste.

Suggestions:
Serve with pita bread or pita chips.  It also makes a great spread for sandwiches!

*If you plan to store it for more than 1 day, you might want to go a little lighter with the garlic.  The garlic flavor tends to get stronger over time.

Chicken Lip Dip

This is another recipe that I got from my friend Lyndy. She brought it to share at a party we had a couple of years ago and I begged her for the recipe afterwards. Every time I have made it, it has been a big hit. It is a great snack for a Super Bowl party or any get-together. I’ll be making it to munch on during the big game this weekend!

Lyndy says the recipe originated in Burlington Iowa….the birthplace of the hot chicken lip.

Ingredients:
2 8 oz blocks cream cheese*
3 cans chicken (you can add more if you want more chicken chunks)
3/4 Cup Franks Hot Sauce
1 Cup Ranch Dip* (already mixed together – find it by the sour cream at the
store)
1 Cup shredded cheddar cheese*

Directions:
Mix all ingredients together and bake at 350 for 30 min. or until it bubbles. I usually sprinkle some extra cheddar cheese on top during the last few minutes of baking time.

Suggestions:
Serve this with tortilla chips or, my personal favorite, slices of pita bread.
You can also cook in a crock pot if you prefer, but make sure and give it enough time to heat thoroughly.

*You can substitute low fat versions of all of these and it still tastes great!

Mozzerella Dip

I got this recipe from my friend Shari. I begged her for the recipe and she gladly shared it with one warning. Do NOT use finely shredded cheese or miracle whip. It will ruin the taste!

Ingredients:
16 oz shredded mozerella (not finely shredded)
16 oz sour cream
16 oz mayo
1 tsp. garlic salt
1 tsp. Accent Salt
1 T. Parsley

Directions:
Mix all ingredients together and refrigerate. Serve with crackers.

Suggestion:
This is great for a party. If you are making it for a smaller group you may want to cut the recipe in half.
